Conductive drying characteristics of gelatinized rice starch

Abstract

The main objective of the experiment in this paper is to investigate the influence of the ratio of the thickness of the plate and that of the film, and initial conditions on the conductive drying characteristics of thin films of gelatinized rice starch on a hot plate under constant heat and mass transfer to the surroundings. From the results of experimental work in this paper, it can be concluded that: the experimental results favour the theory that moisture transport is limited by moisture gradient in the starch film, the influence of the ratio of the thickness of the plate and film is negligible.
